Some of my healthy lunch tips include:
- Use frozen mixed veggies -drizzled with lemon juice, olive oil and dash of soy sauce. Salad will be nicely thawed by lunch and taste great! When I’m in a real hurry I add chick peas, cubed tofu or frozen cooked shrimp for a complete meal dressed and thawed by lunch!
- Always have some nuts and seeds handy for your lunch and/or work snack.
- Have fresh fruit like apples, oranges or bananas handy for lunch and snack.
- Yogurt and applesauce mixed with some of those nuts and seeds -or try yogurt with fruit spread -even adding a dash of almond butter to the mix is nice
- Keep frozen berries handy –can be mixed with yogurt for work snack/lunch.
- Make extra supper food! Leftovers are fabo quick simple lunch fare –just add fresh fruit and veg!
