Hi Kristy -I have THE perfect solution for you (I hope). I too was having this issue with scarves. The solution is to use what is called "Chainless Crochet" OR "Single Crochet Foundation Row" OR "Double Crochet Foundation Row".

I will create a post about this because I think it is something that if you don't know about it and you do Crochet -you will want to know about it. I just about fell off my chair when I found it. Thanks for asking!

Just a note about going lengthwise, one problem I've had, is the original chain is always tighter and when the scarves are wrapped I find that the chain can be felt (and it's uncomfortable).
I've also noticed this with straps going lengthwise for bags & purses.

Hi Rea -
You could approach this in a few ways. If you really don't want to crochet squares you could crochet back and forth width wise or lengthwise. You could also crochet a number of squares and just stitch them all together until you have the length you want. When you say double stitch -do you mean that you want to use the same clusters as with a granny square?
