Beth’s Chocloate Clusters

Beth worked with me for a short time recently and when she was leaving she made everyone in the office these wonderful simple creations. They are chocolate covered cashews with Cranraisins (sweetened cranberries dried like rasins) and coconut. They were divine!

I asked her for the recipe and here it is:

  • 1C chocolate chips (your choice –she used semi-sweet milk chocolate)
  • 1C cashews –salted
  • ½C coconut –toasted
  • ¼C cranberry raisins (Cranraisins –or raisins)

Melt your chocolate (double boiler or in a container within a pot with boiling water -better yet use a microwave) and then add all the ingredients to mix. Drop on waxed paper lined cookie sheets by the tablespoon into small mounds. Refrigerate or leave to cool. That’s it!!

    I think I’ll try this (although, I don’t really have a sweet tooth when it comes to chocolate stuff). Umm, I really have to point this out (because I’m an anal proofreader for everything except stuff I wrote)… I just think you should really take a look at this typo in the recipe: “semi-sweat milk chocolate”.

    Because I’m pretty sure you meant “sweet” and not “sweat”, although maybe you did mean “sweat”… in which case, I may not try it out then only because, it might be difficult to purchase that at my grocery store. Peace. :P
