Beth worked with me for a short time recently and when she was leaving she made everyone in the office these wonderful simple creations. They are chocolate covered cashews with Cranraisins (sweetened cranberries dried like rasins) and coconut. They were divine!

This meatloaf recipe seems closer to the lost loaf love of mine! It actually sounds nice with the brown lentils for a heartier beef-like taste; however the chickpeas will give you a chicken taste with the turkey seasonings.
